I had a great weekend. No, nothing exciting happened but it was relaxing and peaceful. Ahhhhh. Only 144 more hours or so of meat abstinence, and then my colon will be in for an Easter surprise. I will be brief this morning as I have some important issues to take care of. Yes, for me, shaving is an important matter.
Schmoop said a couple of funny things yesterday and didn’t even mean to. We ordered subs from a pizza place Saturday night (yes, mine was veggie). She said yesterday, “That was great. I asked for the seven inch and I got ten inches.” To which I replied, “You just summed up the hopes of many women.”
We were buzzed when we had the subs and the bread was pretty crunchy. She noticed that there was quite a bit of bread crumbs on the floor where she had eaten hers. She looked at the spot where I had eaten mine and she said, “Wow, you don’t have much at all down there.” I said to her, “I’ve heard that often in my life.”
I hope all of you had a wonderful weekend. Later today, I will post something Easter related since Holy Week is upon us and I am getting closer to sitting at the right hand of the Father. Until then, Cheers!!

Yield: 8 servings
1 pk Frozen french fry potatoes,
-thawed (20 oz)
2 c Shredded Cheddar cheese
2 c Sour cream
1 cn Condensed cream of chicken
-soup (10 3/4 oz)
1 cn SPAM Luncheon Meat, cubed
-(12 oz)
1/2 c Chopped red bell pepper
1/2 c Chopped green onion
1/2 c Finely crushed corn flakes
Heat oven to 350'F. In large bowl, combine potatoes, cheese, sour
cream, and soup. Stir in SPAM, bell pepper, and green onion. Spoon
into 13x9" baking dish. Sprinkle with crushed flakes. Bake 30-40
minutes or until thoroughly heated.
