Mexican Meatballs With Black Beans, Corn, and Rice...Ole'

Okay, Here's what I cooked for Cinco de Mayo this past Thursday....

Here are the main ingredients...Black Beans, Corn, and Taco Seasoning...


I then took about a pound and a half of ground beef, added cracker crumbs, an egg, garlic powder and made meatballs mixing in the aforementioned Taco Seasoning...

I then cooked said balls o' meat...

I then started to fry the corn in butter and sugar...


Added tomatoes...


Added Black Beans...


Cooked Three cups of rice...


Browned some 7 minute rolls, and please, put an egg wash on the so they look pretty...


And...voila...

This recipe will always get two thumbs up...
